It came in 2 pieces should I cook it low indirect heat or just cook it like a giant pork chop?

Seal it on high heat the reduce heat for about 2025 minutes per lb checking occasionally

We make a brine. Even only 4 hours will work but we try for over night. In a large enough container to be able to cover completely I usually add 1/2 to 1 cup pickling salt to hot water dissolve. To this I add various spices I use garlic powder black pepper sometimes spicy Mrs. Dash whatever trips my fancy that day and fruit juice if I have any. Apple juice or grape juice is good. You can also use vinegars brown or white sugarhoney or syrups. The combinations are endless you can do a search also for brining recipes.
After brining rinse meat and pat dry. Then my husband adds hickory apple or pear wood to the charcoal to slow smoke over indirect heat until it is done. This is a good way to learn about the benefits of brining meats. Chicken is great this way also. Beef roasts what ever is delicious.
