Question by Elise: I am looking for a specific recipe online, can you help me find it?
I used to have the most wonderful recipe for South Beach Diet (phase one friendly) stuffed peppers. The page that I found it one used to be bookmarked, but my computer crashed and I can’t find it at all now. I remember when I had originally found it, I had searched on google “South Beach Diet Phase one recipes” and the page that listed the peppers was near the top.
I have searched the same thing again, but I can’t find the recipe that I am looking for. If you know of one that has the below ingredients, or sounds similar, please let me know.

Ingredients that it has:
Crushed pork rinds to coat the peppers
several types of cheeses
Bacon
The website also gives a quick tutorial on how to seed peppers

Ingredients that it does NOT have:
Chicken
Lasagna,
It is NOT the recipe from Kalyn’s Kitchen or the lasagna stuffed peppers.

Hi, not to burst your bubble, but bacon and pork rinds are absolutely NOT allowed in phase one…..so this recipe is not phase one friendly…sorry :(

I checked the South Beach Diet recipes and it is no longer there.

Chicken Stuffed Peppers – South Beach Diet Recipe (Phase 2)
2 cups boneless skinless chicken breast — cooked and chopped
2 red bell peppers
salt and pepper
1/2 cup onion — chopped
1 medium zucchini — chopped
3/4 cup part skim milk mozzarella cheese — shredded
4 tablespoons parmesan cheese — grated
2 tablespoons boursin light cream cheese
3 cloves garlic
all purpose herb seasoning
Saute garlic, onion and zuchini.
Prepare pepers for stuffing. combine all other ingredients(except the parmesan) and the sauted vegies in food proceseor and process till smooth add dash of ff/ half and half if needed to thin a little.Fill pepper shells then bake at 35 for 30 minutes top with parmesan and bake at 400 an additional 10 minutes. Remove and let rest 10 minutes before serving.
